Expert's opinion: The Shires Beval double jointed allows for better relaxation of the horse's mouth. Indeed, unlike the single jointed which acts on the palate which is a sensitive part of the horse's mouth, the double jointed acts on the tongue without causing pain. The rings help to get the horse's attention and help him to relax his jaw on the bit in order to obtain a pleasant tension that is conducive to relaxation.
The Beval bit with central rings is a versatile bit that allows the horse to switch leverage and focus on the rider's aids. The 3-way bit is often used to test the horse's reaction to leverage.

Sweet Iron : Sweet Iron alloy oxidizes upon contact with moisture in the mouth and air. The oxidation brings a sweet taste that naturally stimulates the production of saliva. This corresponds to the effect of a sugar that is given to the horse at the beginning of the session but allows to diffuse this sweet taste throughout the work. Therefore, this alloy allows a good acceptance of the bit and helps the horse to make contact with the mouthpiece. The oxydation modifies the aspect of the bit during the sessions.
